Ingredients 

  • 1 cup Turkey drippings
  • 4 tablespoons Butter
  • 1/4 cup All-purpose flour
  • 3 cups Chicken broth, or turkey broth
  • 1 teaspoon Salt, adjust to taste
  • 1/2 teaspoon Black pepper, adjust to taste
  • 1 teaspoon Fresh herbs, optional (finely chopped (thyme, sage, rosemary)

Instructions

  • Once your turkey is out of the oven, pour the 1 cup Turkey drippings into a heat-safe cup or bowl. Let the fat rise to the top and skim off a few tablespoons.
  • Melt 4 tablespoons Butter in a saucepan. Add 1/4 cup All-purpose flour and whisk until it turns lightly golden—don’t rush this step unless you enjoy raw flour flavor.
  • Slowly whisk in the drippings and 3 cups Chicken broth. Whisk like you mean it to avoid lumps.
