In a large bowl, beat the softened cream cheese and peanut butter with an electric mixer on medium speed until completely smooth, about 1–2 minutes.
Add the powdered sugar, brown sugar, and vanilla. Beat on low until combined, then increase speed to medium for 30 seconds until light and fluffy.
Fold in 1 cup chopped Snickers, 1/4 cup peanuts, and 1/4 cup mini chocolate chips. Reserve the rest for coating.
Lay two sheets of plastic wrap in a cross pattern on the counter. Scoop the mixture onto the center. Gather and twist the plastic wrap to form a ball.
Refrigerate for at least 4 hours or overnight.
Combine the remaining 1/2 cup Snickers, 1/4 cup peanuts, and 1/4 cup chocolate chips on a plate. Unwrap the chilled cheese ball and roll/press it into the coating until fully covered.
Transfer to a serving platter, drizzle generously with caramel sauce, and serve with graham crackers, pretzels, vanilla wafers, and apple slices.
