This Easy Slow Cooker Stuffed Pepper Soup is a heartwarming family tradition passed down from my grandmother. Enjoy all the classic flavors of stuffed peppers in a hearty, set-it-and-forget-it crockpot recipe—perfect for cozy holiday gatherings and cold winter nights!

Ingredients 

  • 1 pound lean ground beef, browned and drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 green bell peppers, chopped
  • 1 red bell pepper, chopped
  • 28 ounces crushed tomatoes
  • 15 ounces tomato sauce
  • 3 cups beef broth
  • 1 cup cooked rice, white or brown
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper, to taste

Instructions

  • Add the 1 pound lean ground beef, 1 small onion, 2 cloves garlic, chopped 2 green bell peppers, chopped 1 red bell pepper, 28 ounces crushed tomatoes, 15 ounces tomato sauce 3 cups beef broth, 1 tablespoon Worcestershire sauce, 1 teaspoon Italian seasoning, ½ teaspoon paprika, and Salt and pepper to your slow cooker.
  • Cover and cook on low for 6–8 hours or high for 3–4 hours, until the peppers are tender.
  • About 20 minutes before serving, stir in the 1 cup cooked rice to prevent it from becoming mushy.
  • Taste the soup and adjust seasonings as needed before serving.
