Ingredients
2poundsFresh spinach, about 8 cups loosely packed
4tablespoonsButter
1cupHeavy cream
4ouncesCream cheese , ½ block, softened
3clovesGarlic, minced
1/2mediumOnion, finely chopped
1/2cupParmesan cheese, freshly grated
1/4teaspoonNutmeg, freshly grated if possible
1/2teaspoonSalt, adjust to taste
1/4teaspoonBlack pepper, adjust to taste
Instructions
Wash and roughly chop 2 pounds Fresh spinach, removing any tough stems.
In a large skillet, melt 4 tablespoons Butter over medium heat. Add minced 3 cloves Garlic and finely chopped 1/2 medium Onion sautéing until fragrant and soft.
Pour in 1 cup Heavy cream and stir in 4 ounces Cream cheese , cooking until the mixture is smooth and velvety.
Add the chopped spinach to the skillet, stirring until wilted and evenly coated in the creamy mixture.
Stir in grated 1/2 cup Parmesan cheese, 1/4 teaspoon Nutmeg, 1/2 teaspoon Salt and 1/4 teaspoon Black pepper. Cook until the spinach is tender and the sauce is thickened.
Transfer to a serving dish and enjoy immediately as a rich, cheesy side dish alongside steak or your favorite main course.
