Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or similar size with butter or nonstick spray.
In a large mixing bowl, add the 1 cup Whole Kernel Corn, 1 cup Creamed Corn, 1 cup Jiffy Corn Muffin Mix, 1/2 cup Sour Cream , melted 1/4 cup Butter, 2 tablespoons Sugar, and beaten 2 large Eggs. Stir until all ingredients are well combined.
If using, fold in ¼ cup of shredded 1/2 cup Cheddar cheese into the mixture, reserving the remaining ¼ cup for topping.
Pour the mixture into the prepared baking dish. Smooth the top with a spatula and sprinkle the remaining cheddar cheese evenly over the top, if desired.
Bake for 40–45 minutes, or until the casserole is golden brown and a toothpick inserted in the center comes out clean.
