In a skillet over medium heat, cook the 1 lb ground beef and chopped 1 small onion until browned. Drain any excess fat, then season with 1 teaspoon salt and ½ teaspoon black pepper
Spread the cooked beef mixture evenly in a greased 9×13-inch baking dish. Sprinkle 2 cups shredded cheddar cheese over the top.
In a medium bowl, whisk together 2 cups Bisquick baking mix, 1 cup milk, and 2 large eggsuntil smooth. Pour the batter evenly over the beef and cheese layers.
Bake in a preheated oven at 400°F (200°C) for 25 minutes, or until the crust is golden brown and set in the center.
