In the pint bowl, combine 1 ¼ cup whole milk, 1/2 cup heavy cream, 2 tablespoons dry strawberry ice cream mix, 1 tablespoon granulated sugar, and ¼ teaspoon vanilla extract. Blend until smooth.
Secure the lid, and freeze for 24 hours.
After 24 hours, remove the pint container from the freezer, take off the lid, and place it in the Ninja Creami machine. Select the "Gelato" function and churn until smooth.
Add in diced 1 cup strawberries to the blended mixture. Place back into the machine with lid (with paddle) and select “Mix-in” function.
If the gelato appears crumbly, add a small splash of milk and use the "Re-mix" function to get the perfect creamy texture.
Enjoy immediately for fresh, soft gelato or store in the freezer for a firmer consistency.
