Description

Try Ina Garten’s Curried Chicken Salad with tender chicken, crisp apples, juicy grapes, and a hint of curry. Quick, flavorful, and perfect for sandwiches, wraps, or salads.

Ingredients 

  • 3 cups cooked chicken, chopped
  • 1 cup mayonnaise
  • 2 tablespoons plain Greek yogurt
  • teaspoons curry powder
  • 1 teaspoon lemon juice
  • 1 apple, diced
  • ½ cup seedless grapes, halved
  • ½ cup celery, diced
  • ½ cup raisins
  • ¼ cup slivered almonds, optional
  • Salt and freshly ground black pepper, to taste

Instructions

  • Chop 3 cups cooked chicken into bite-sized pieces. Rotisserie chicken works perfectly for a quick prep.
  • In a large bowl, whisk together 1 cup mayonnaise , 2 tablespoons plain Greek yogurt , 1½ teaspoons curry powder , and 1 teaspoon lemon juice until smooth.
  • Add chopped chicken, diced 1 apple, halved ½ cup seedless grapes, ½ cup celery, ½ cup raisins , and ¼ cup slivered almonds (if using). Toss gently until everything is evenly coated with the dressing.
  • Add Salt and freshly ground black pepper to taste. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  • Serve on sandwiches, in wraps, or over a bed of fresh greens for a light and flavorful meal.
