Ingredients
3cupscooked chicken, chopped
1cupmayonnaise
2tablespoonsplain Greek yogurt
1½teaspoonscurry powder
1teaspoonlemon juice
1apple, diced
½cupseedless grapes, halved
½cupcelery, diced
½cupraisins
¼cupslivered almonds, optional
Salt and freshly ground black pepper, to taste
Instructions
Chop 3 cups cooked chicken into bite-sized pieces. Rotisserie chicken works perfectly for a quick prep.
In a large bowl, whisk together 1 cup mayonnaise , 2 tablespoons plain Greek yogurt , 1½ teaspoons curry powder , and 1 teaspoon lemon juice until smooth.
Add chopped chicken, diced 1 apple, halved ½ cup seedless grapes, ½ cup celery, ½ cup raisins , and ¼ cup slivered almonds (if using). Toss gently until everything is evenly coated with the dressing.
Add Salt and freshly ground black pepper to taste. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
Serve on sandwiches, in wraps, or over a bed of fresh greens for a light and flavorful meal.
