Ingredients
1whole chicken, about 4–5 pounds
2tablespoonsolive oil
4tablespoonsunsalted butter, softened
1tablespoonfresh thyme leaves
1lemon, halved
4garlic cloves, crushed
Salt and freshly ground black pepper, to taste
Instructions
Preheat oven to 425°F (220°C). Remove giblets and pat the 1 whole chicken dry with paper towels.
Rub 2 tablespoons olive oil and 4 tablespoons unsalted butter all over the chicken. Sprinkle with 1 tablespoon fresh thyme leaves, Salt and freshly ground black pepper. Place 1 lemon halves and crushed 4 garlic cloves inside the cavity.
Tie legs together with kitchen twine and tuck wing tips under. Place in a roasting pan.
Roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
Remove from oven, tent with foil, and let rest 10–15 minutes. Carve and serve.
