Ingredients 

  • 1 whole chicken, about 4–5 pounds
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh thyme leaves
  • 1 lemon, halved
  • 4 garlic cloves, crushed
  • Salt and freshly ground black pepper, to taste

Instructions

  • Preheat oven to 425°F (220°C). Remove giblets and pat the 1 whole chicken dry with paper towels.
  • Rub 2 tablespoons olive oil and 4 tablespoons unsalted butter all over the chicken. Sprinkle with 1 tablespoon fresh thyme leaves, Salt and freshly ground black pepper. Place 1 lemon halves and crushed 4 garlic cloves inside the cavity.
  • Tie legs together with kitchen twine and tuck wing tips under. Place in a roasting pan.
  • Roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
  • Remove from oven, tent with foil, and let rest 10–15 minutes. Carve and serve.
