Ingredients 

  • 4 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth, or vegetable broth
  • 2 cups half-and-half, or milk for lighter version
  • 3 cups fresh broccoli florets, chopped
  • 1 cup shredded carrots
  • 2 cups shredded sharp cheddar cheese
  • Salt and black pepper, to taste
  • 1/4 teaspoon paprika, optional

Instructions

  • Melt butter in a large pot over medium heat. Sauté onion and garlic until fragrant.
  • Stir in flour, cooking for 1–2 minutes.
  • Gradually whisk in chicken broth and half-and-half until smooth.
  • Add broccoli and carrots; simmer 10–12 minutes until tender.
  • Lower heat, stir in shredded cheddar until smooth. Season with salt, pepper, and paprika.
  • Serve hot with your favorite sides.
