Ingredients
1lbGround Beef, 80/20 for the best flavor.
1/2lbBreakfast Sausage
3cupsLong-Grain White Rice, Cooked and cooled
1smallYellow Onion, Finely diced.
1Green Bell Pepper, Finely diced.
2clovesGarlic, Minced.
2cupsBeef Broth
1tablespoonChili Powder
1teaspoonCumin
1teaspoonGarlic Powder
1/2teaspoonCayenne, (optional for heat)
1teaspoonSalt
1/2teaspoonBlack Pepper
Instructions
In a large skillet or Dutch oven, brown the 1 lb Ground Beef and1/2 lb Breakfast Sausage together over medium-high heat. Break the meat into very small crumbles—the smaller the better for that authentic "dirty" look.
Once the meat is browned, do not drain all the grease (leave about 1 tablespoon for flavor). Add the diced 1 small Yellow Onion, 1 Green Bell Pepper, and 2 cloves Garlic. Sauté until the vegetables are soft and translucent.
Stir in your spices (1 tablespoon Chili Powder, 1 teaspoon Cumin, 1 teaspoon Garlic Powder, 1/2 teaspoon Cayenne1 teaspoon Salt, and 1/2 teaspoon Black Pepper). Add the uncooked r3 cups Long-Grain White Rice and 2 cups Beef Broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and the liquid is absorbed.
Turn off the heat and let the rice sit covered for 5 minutes. Fluff with a fork to distribute the meat and veggies evenly.
