In a medium bowl, gently combine diced 2 ripe avocados, ¼ cup sun-dried tomatoes, ¼ cup red onion, 2 tablespoons cilantro, 1 teaspoon lime juice, Salt and pepper.
Place 2–3 tablespoons of filling in the center of each 8 egg roll wrappers. Fold in the sides and roll tightly, sealing edges with a little water.
Set your air fryer to 375°F (190°C) for 3–5 minutes.
Lightly brush each egg roll with vegetable oil. Place in a single layer in the air fryer basket and cook for 8–10 minutes, flipping halfway, until golden and crispy.
In a small bowl, mix ¼ cup sour cream, 1 tablespoon lime juice, 1 tablespoon chopped cilantro, Salt and pepper until smooth.
Let egg rolls cool 1–2 minutes, then serve immediately with cilantro-lime dipping sauce.
