Description

Easy Air Fryer Stuffed Mini Peppers are tender, cheesy, and full of flavor. Perfect for quick snacks, appetizers, or colorful party bites ready in minutes.

Ingredients 

  • 1 pound mini sweet peppers, approximately 16-20 peppers
  • 1/2 cup cream cheese, optional
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt, adjust to taste
  • 1/4 teaspoon black pepper, adjust to taste
  • 1/2 teaspoon garlic powder, optional
  • 1/2 teaspoon paprika, optional
  • Fresh herbs, such as thyme or rosemary for garnish (optional)

Instructions

  • Preheat your air fryer temperature to 370 degrees F (188°C) and lightly spray the basket with cooking spray.
  • Wash and halve the 1 pound mini sweet peppers, removing the seeds and membranes.
  • Prepare your filling, this can be 1/2 cup cream cheese shredded cheese, a mix of black beans and corn, or any savory mixture you prefer.
  • Stuff each pepper half generously with your filling, pressing lightly so it stays inside.
  • Arrange the stuffed peppers in a single layer in the air fryer basket, leaving a little space between each.
  • Drizzle or brush with 2 tablespoons olive oil, then season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon paprika if using.
  • Set cook time for 6–8 minutes, checking halfway through, until the peppers are tender and the filling is melted and bubbly.
  • Remove carefully from the air fryer, garnish with Fresh herbs if desired, and serve warm.
