Preheat your air fryer temperature to 370 degrees F (188°C) and lightly spray the basket with cooking spray.
Wash and halve the 1 pound mini sweet peppers, removing the seeds and membranes.
Prepare your filling, this can be 1/2 cup cream cheese shredded cheese, a mix of black beans and corn, or any savory mixture you prefer.
Stuff each pepper half generously with your filling, pressing lightly so it stays inside.
Arrange the stuffed peppers in a single layer in the air fryer basket, leaving a little space between each.
Drizzle or brush with 2 tablespoons olive oil, then season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, and 1/2 teaspoon paprika if using.
Set cook time for 6–8 minutes, checking halfway through, until the peppers are tender and the filling is melted and bubbly.
Remove carefully from the air fryer, garnish with Fresh herbs if desired, and serve warm.
