Description

Air Fryer Salmon Kebabs, such an easy and delicious meal. Marinated today with a few herbs and air-fried or grilled to perfection.

Ingredients 

  • 1 pound Salmon Fillets
  • 1 large Bell Pepper, diced
  • 1 cup Red Onion, diced
  • 1 medium Zucchini, diced
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice,
  • 1 teaspoon Garlic, or garlic powder
  • 1 teaspoon Seasoning Blend
  • salt and pepper to taste

Instructions

  • In a large bowl, whisk together the 2 tablespoons Olive Oil, 1 tablespoon Lemon Juice. 1 teaspoon Garlic, 1 teaspoon Seasoning Blend, and salt and pepper to taste.
  • Add the cubed 1 pound Salmon Fillets, 1 large Bell Pepper, 1 cup Red Onion, and 1 medium Zucchini to the bowl.
  • Gently toss the ingredients until everything is evenly coated in the marinade.
  • Let the mixture rest for 10–15 minutes while you prepare the air fryer. (No need to marinate longer, as the lemon juice can start "cooking" the fish.)
  • Thread the salmon cubes and vegetables onto your skewers. Alternate between the salmon and the vegetables for even cooking.
  • Preheat your air fryer to 400°F (200°C) for about 3–5 minutes.
  • Lightly spray the air fryer basket with cooking spray to prevent sticking.
  • Place the kebabs in the air fryer basket in a single layer, ensuring they do not overlap. You may need to cook in batches.
  • Air fry for 6–8 minutes total, flipping the skewers halfway through (after 3–4 minutes).
  • The salmon is done when it is flaky and reaches an internal temperature of 145°F (63°C).
  • Carefully remove the kebabs and let them rest for 2 minutes.
  • Serve immediately, perhaps with a squeeze of fresh lemon juice or a dipping sauce!
