In a large bowl, whisk together the 2 tablespoons Olive Oil, 1 tablespoon Lemon Juice. 1 teaspoon Garlic, 1 teaspoon Seasoning Blend, and salt and pepper to taste.
Add the cubed 1 pound Salmon Fillets, 1 large Bell Pepper, 1 cup Red Onion, and 1 medium Zucchini to the bowl.
Gently toss the ingredients until everything is evenly coated in the marinade.
Let the mixture rest for 10–15 minutes while you prepare the air fryer. (No need to marinate longer, as the lemon juice can start "cooking" the fish.)
Thread the salmon cubes and vegetables onto your skewers. Alternate between the salmon and the vegetables for even cooking.
Preheat your air fryer to 400°F (200°C) for about 3–5 minutes.
Lightly spray the air fryer basket with cooking spray to prevent sticking.
Place the kebabs in the air fryer basket in a single layer, ensuring they do not overlap. You may need to cook in batches.
Air fry for 6–8 minutes total, flipping the skewers halfway through (after 3–4 minutes).
The salmon is done when it is flaky and reaches an internal temperature of 145°F (63°C).
Carefully remove the kebabs and let them rest for 2 minutes.
Serve immediately, perhaps with a squeeze of fresh lemon juice or a dipping sauce!
