2cupsmashed potatoes, cold
1cupshredded cheese, cheddar
1/4cupbacon bits
1stalkgreen scallion
2tablespoonsall-purpose flour
1largeegg
1cuppanko bread crumbs
Instructions
In a medium-sized bowl, mix the 2 cups mashed potatoes, 1 large egg, 2 tablespoons all-purpose flour, 1 cup shredded cheese, 1/4 cup bacon bits, and sliced 1 stalk green scallion. Mix well.
In another bowl, pour your 1 cup panko bread crumbs.
Form a potato pancake, then coat it with the panko bread crumbs. Place your coated potato pancakes on a parchment-lined dish. Place the potato pancakes into the freezer for about 10-15 minutes, until frozen solid.
Lay a piece of parchment paper down, and then place the frozen potato pancake on top.
Set air fryer temperature to 380 degrees F, and set cook time for 12-15 minutes, using air fryer setting, flipping halfway.
