Description
A small-batch blackberry cobbler with a buttery, lemony batter that rises around juicy berries, made entirely in the air fryer.
Ingredients
4
tablespoons
unsalted butter
3/4
cup
self-rising flour
1/4
cup
granulated sugar
1/2
teaspoon
kosher salt
1
tablespoon
lemon zest
1/2
cup
lemon-lime soda
,
such as Sprite or 7UP
6
ounces
fresh or frozen blackberries
,
about 1 1/4 cups
Instructions
Place the butter in a 6- or 7-inch round cake pan and set it in the air fryer basket. Preheat to 320°F and let the butter melt, 2 to 3 minutes.
In a medium bowl, whisk the flour, sugar, salt, and lemon zest. Pour in the melted butter, leaving a thin coating in the pan. Add the soda.
Whisk until no dry flour remains. A few lumps are fine.
Pour the batter into the pan and scatter the blackberries on top without stirring.
Cover tightly with foil, tucking the edges under the rim. Air fry at 320°F for 20 minutes, until the edges are puffed and set.
Remove the foil and air fry for 15 more minutes, until golden and a toothpick in the center comes out clean.
Cool for 5 to 10 minutes. Serve warm with ice cream or whipped cream.
Equipment
Air Fryer
6- or 7-inch round cake pan
Aluminum Foil
Notes
Frozen berries may need 2 to 3 extra minutes. If the top browns too quickly, cover it loosely with foil.
