These Easy 7 Layer Dip Cups are a colorful, flavorful appetizer perfect for parties, game days, or casual snacking. Layers of beans, guacamole, seasoned sour cream, cheese, tomatoes, olives, and green onions make every bite delicious.
Ingredients
Guacamole Ingredients:
2largeavocados, ripe
2largegarlic, finely minced, cloves
2tablespoonsfresh lime juice
Sea salt and pepper, to taste
7 Layer Dip Cup Ingredients:
1½cupsour cream
2teaspoonchili powder
1teaspoonground cumin
1teaspoongarlic powder
Sea salt and pepper, to taste
1½cuprefried beans
1pintcherry tomatoes, or grape tomatoes, chopped small
1cup4-cheese Mexican blend, finely shredded
15ouncesblack olives, drained and chopped small
3large green onions, green parts only, sliced thin
To serve: Tortilla chips
Instructions
Halve the 2 large avocados and remove the pits. Scoop the flesh into a large bowl, add minced 2 large garlic and 2 tablespoons fresh lime juice, then season with Sea salt and pepper. Mash with a fork until smooth and creamy. Cover tightly and set aside.
In a separate bowl, combine 1½ cup sour cream, 2 teaspoon chili powder, 1 teaspoon ground cumin, and 1 teaspoon garlic powder. Season with Sea salt and pepper, then stir until well mixed. Set aside.
Spoon about two tablespoons of refried beans into the bottom of each cup. Add a layer of guacamole followed by two tablespoons of the seasoned sour cream in each cup.
Top each cup with 3–4 chopped tomatoes, one tablespoon of shredded Mexican cheese, 3–4 chopped black olives, and a few green onion slices.
Optionally, place a tortilla chip in each cup for garnish. Serve immediately with extra tortilla chips on the side and enjoy!
