Description

Ingredients 

  • 28 ounces Tomatoes, diced tomatoes.
  • 1/2 cup Fresh Basil,
  • 1 medium Onion, diced.
  • 3 cloves Garlic, minced.
  • 3 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • 1/2 cup Coconut Milk, or Almond Milk
  • 1 teaspoon Salt, To taste
  • 1/4 teaspoon Pepper, To taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until soft and fragrant.
  • Stir in fresh or canned tomatoes and cook for a few minutes to break them down.
  • Pour in vegetable broth, season with salt and pepper, and bring to a boil. Reduce heat and simmer for about 15 minutes to allow the flavors to meld.
  • Remove from heat and add fresh basil leaves. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
  • Stir in coconut milk or almond milk to achieve a creamy texture. Adjust seasoning to taste.
  • Ladle the soup into bowls, garnish with fresh basil, and enjoy with your favorite crusty bread or a salad!
