1/2cupFresh Basil,
1mediumOnion, diced.
3clovesGarlic, minced.
3cupsVegetable Broth

1/2cupCoconut Milk, or Almond Milk
1teaspoonSalt, To taste
1/4teaspoonPepper, To taste
Instructions
Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until soft and fragrant.
Stir in fresh or canned tomatoes and cook for a few minutes to break them down.
Pour in vegetable broth, season with salt and pepper, and bring to a boil. Reduce heat and simmer for about 15 minutes to allow the flavors to meld.
