Place the seared pork roast in the air fryer. Pour the mushroom and broth mixture over the roast.
Air fry the pork roast for approximately 50 minutes or until it reaches an internal temperature of 160°F for medium or 170°F for well done. The cooking time may vary based on the exact size of your pork roast.
If you prefer a thicker gravy, transfer the liquid from the air fryer to a saucepan, bring to a simmer, and stir in the cornstarch mixture. Cook until thickened.
Once cooked, allow the pork roast to rest for a few minutes. Slice, serve with the mushroom gravy, and enjoy!
