Ingredients 

  • 1 boneless pork roast, about 3-4 lbs
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 medium onion, thinly sliced
  • 1 cup beef or chicken broth
  • 2 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp cornstarch mixed with 2 tbsp water, optional for thickening

Instructions

  • Preheat the air fryer to 375°F.
  • Season the pork roast generously with salt and pepper on all sides.
  • In a skillet over medium-high heat, add olive oil. Sear the pork roast on all sides until it forms a golden crust. Remove and set aside.
  • In the same skillet, add sliced mushrooms, minced garlic, and onion. Sauté until the onions are translucent and mushrooms have released their moisture.
  • Mix together the broth, soy sauce, dried thyme, and dried rosemary. Pour this mixture over the sautéed vegetables.
  • Place the seared pork roast in the air fryer. Pour the mushroom and broth mixture over the roast.
  • Air fry the pork roast for approximately 50 minutes or until it reaches an internal temperature of 160°F for medium or 170°F for well done. The cooking time may vary based on the exact size of your pork roast.
  • If you prefer a thicker gravy, transfer the liquid from the air fryer to a saucepan, bring to a simmer, and stir in the cornstarch mixture. Cook until thickened.
  • Once cooked, allow the pork roast to rest for a few minutes. Slice, serve with the mushroom gravy, and enjoy!
