Ingredients
2poundsRusset potatoes, peeled and cut into chunks
1/4cupmargarine, or butter
1/2cupmilk, warm, more as needed
1/2teaspoonSalt, to taste
1/2teaspoonBlack pepper, to taste
Instructions
Place chopped potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil and cook for 15–20 minutes until fork-tender.
Drain the potatoes well and return them to the pot.
Mash the hot potatoes using a potato masher or hand mixer.
Stir in margarine and warm milk. Continue mashing until smooth and creamy, adding more milk if needed.
Add salt and pepper to taste.
Spoon into a bowl, top with a pat of butter or fresh herbs, and serve warm.
