Description

Soft, thick copycat Publix sugar cookies topped with rainbow nonpareils. Almond extract is the secret to that bakery-counter flavor, and a short bake keeps the centers tender for days.

Ingredients 

  • 1 cup unsalted butter, softened (2 sticks)
  • cups granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon almond extract
  • cups all-purpose flour, 345g, spooned and leveled
  • 2 teaspoons cornstarch
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup rainbow nonpareils

Instructions

  • Whisk together the flour, cornstarch, baking powder, baking soda, and salt in a medium bowl. Set aside.
  • Beat the softened butter and granulated sugar with an electric mixer on medium for 3 minutes, until pale and fluffy.
  • Add the egg, vanilla extract, and almond extract. Beat until smooth, scraping down the bowl once.
  • Add the dry ingredients and mix on low just until combined. Do not overmix.
  • Cover and chill the dough for 30 minutes.
  • Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Pour the nonpareils into a shallow bowl.
  • Roll the dough into 1-inch balls. Dip the top of each ball into the nonpareils, pressing gently, and place sprinkle-side up on the baking sheet, 2 inches apart.
  • Flatten each ball to about ½ inch thick with the bottom of a glass.
  • Bake 9 to 11 minutes, until the edges are just set and the centers still look slightly underbaked.
  • Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Store airtight at room temperature up to 1 week, or freeze baked cookies up to 3 months. Dough balls can be dipped in nonpareils and frozen raw — bake from frozen, adding 1 to 2 minutes.
