Description

Soft, fluffy, buttery pancakes just like the classic Perkins diner favorite. These pancakes are light, golden, and perfect for a cozy homemade breakfast.

Ingredients 

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 tablespoons melted butter, plus more for cooking
  • Maple syrup, for serving
  • Butter, for topping (optional)

Instructions

  • In a large bowl, whisk 2 cups all-purpose flour 1/4 cup granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt until combined.
  • In a separate bowl, whisk 2 cups milk, 2 large eggs, 1 teaspoon vanilla extract, and melted 4 tablespoons melted butteruntil smooth.
  • Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.
  • Heat a skillet or griddle over medium heat and lightly grease with butter.
  • Pour 1/4 cup batter per pancake onto hot surface.
  • Cook until bubbles form and edges are set, then flip and cook until golden brown.
  • Serve warm with butter and maple syrup.
