Description

Crispy seasoned steakhouse fries loaded with melted Monterey Jack and sharp cheddar, topped with crispy chopped bacon, and served with a cool spicy ranch for dipping. This copycat Outback Aussie Cheese Fries recipe tastes just like the restaurant appetizer, with air fryer, oven, and deep fryer methods included.

Ingredients 

For the Aussie Fries

  • 3 lbs russet potatoes, about 4 large, scrubbed, skin on
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch, optional, for extra crispness
  • teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon seasoned salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper

For the Topping

  • cups Monterey Jack cheese, freshly shredded (about 6 oz)
  • cups sharp cheddar cheese, freshly shredded (about 6 oz)
  • 8 slices thick-cut bacon, cooked crisp and chopped
  • 3 green onions, thinly sliced (optional)

For the Spicy Ranch Dipping Sauce

  • ½ cup mayonnaise
  • ½ cup sour cream
  • ¼ cup buttermilk
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 to 2 teaspoons hot sauce, to taste
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • Salt, to taste

Instructions

  • Cut and soak the potatoes. Scrub the potatoes and cut into ½-inch thick sticks, leaving the skin on. Place in a large bowl, cover with cold water, and soak 30 minutes to remove surface starch.
  • Dry thoroughly. Drain and pat completely dry with a kitchen towel. Remaining moisture will steam the fries instead of crisping them.
  • Mix the seasoning. Combine the paprika, garlic powder, onion powder, seasoned salt, black pepper, and cayenne in a small bowl.
  • Season the fries. Toss the dried potatoes with the cornstarch, then with the oil until evenly coated. Add half the seasoning blend and toss again. Reserve the remaining half.
  • Cook the fries. Preheat the air fryer to 400°F. Add the fries in a single layer, working in batches, and cook 15 to 18 minutes, shaking the basket 2 to 3 times, until deeply golden and crisp. Cook slightly past your usual doneness so they hold up under the cheese.
  • Cook the bacon. While the fries cook, cook the bacon until crisp, drain on paper towels, and chop.
  • Make the dipping sauce. Whisk together the mayonnaise, sour cream, buttermilk, dill, parsley, garlic powder, onion powder, hot sauce, cayenne, and black pepper. Season with salt to taste and refrigerate until serving.
  • Load the fries. Preheat the oven or broiler to 400°F. Spread the hot fries in a wide, shallow layer on a rimmed sheet pan or in a cast iron skillet. Sprinkle with the reserved seasoning, then top evenly with the Monterey Jack and cheddar.
  • Melt the cheese. Bake 2 to 4 minutes, just until fully melted and bubbling at the edges. Do not let it brown or the cheese will separate.
  • Finish and serve. Scatter the chopped bacon and green onions over the top. Serve immediately with the chilled spicy ranch on the side.

Notes

  • Frozen fry shortcut: Substitute a 28–32 oz bag of frozen thick-cut or steak fries. Cook per package directions plus 2 minutes, toss with the full seasoning blend, then continue from Step 8. Total time drops to about 30 minutes.
  • Oven method: Bake seasoned fries on a parchment-lined sheet pan at 425°F for 30 to 35 minutes, flipping once halfway through.
  • Deep fryer method: Fry at 325°F for 4 to 5 minutes, rest 10 minutes, then fry again at 375°F for 2 to 3 minutes. Season immediately out of the oil.
  • Grate your own cheese. Pre-shredded cheese contains anti-caking starch that makes melted cheese grainy and oily.
  • Serve the sauce on the side, not drizzled over — it softens the fries within a minute.
  • Make it spicier: Swap Monterey Jack for pepper jack and add pickled jalapeños.
  • Storage: Refrigerate leftovers up to 2 days and reheat at 375°F for 5 to 7 minutes. The sauce keeps separately for 5 days and improves overnight.
