Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
In a large bowl, combine 2 cups of rolled oats, baking soda, and salt. Mix well.
In a separate bowl, whisk together vegetable oil, honey, brown sugar, and vanilla extract.
Pour the wet mixture into the dry ingredients and stir until well combined.
Stir in the remaining ½ cup of oats and ensure everything is evenly mixed.
Press the mixture firmly into the prepared baking dish, spreading it evenly.
Bake for 15-20 minutes, or until the edges are golden brown.
Allow the granola to cool completely in the pan. Once cooled, remove from the pan and cut into bars.
