Ingredients 

  • 2 ½ cups rolled oats, divided
  • ¼ cup vegetable oil, or any neutral oil
  • ¼ cup honey
  • 1 tsp vanilla extract
  • ¼ cup brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  • In a large bowl, combine 2 cups of rolled oats, baking soda, and salt. Mix well.
  • In a separate bowl, whisk together vegetable oil, honey, brown sugar, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and stir until well combined.
  • Stir in the remaining ½ cup of oats and ensure everything is evenly mixed.
  • Press the mixture firmly into the prepared baking dish, spreading it evenly.
  • Bake for 15-20 minutes, or until the edges are golden brown.
  • Allow the granola to cool completely in the pan. Once cooled, remove from the pan and cut into bars.
