Copycat McCormick Turkey Gravy Mix

Description

A five minute copycat of the McCormick turkey gravy packet, built from the actual ingredient label. One batch equals one 0.87 oz packet and makes a cup of rich turkey gravy with no drippings required.

Ingredients 

Ingredients (dry mix)

  • 2 tablespoons all purpose flour
  • 1 teaspoon cornstarch
  • 1 tablespoon nonfat dry milk powder
  • 2 teaspoons chicken bouillon powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon rubbed sage
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon celery seed, ground
  • 1/8 teaspoon dried rosemary, crushed

To prepare the gravy

  • 1 cup cold water
  • 1 tablespoon butter

Instructions

  • Add all dry mix ingredients to a small bowl. Whisk 30 seconds until the color is uniform with no streaks of paprika.
  • Use immediately, or transfer to an airtight jar and store up to 6 months in a cool dark place.
  • To make gravy, whisk 3 tablespoons of mix into 1 cup cold water in a small saucepan until smooth. Cold water prevents lumps.
  • Bring to a boil over medium heat, whisking often. Reduce heat and simmer 1 minute.
  • Remove from heat and whisk in the butter. The gravy thickens as it stands, so pull it slightly looser than you want it.

Notes

Multiply the dry mix by 8 for a pint jar and use 3 tablespoons per cup of water. Shake the jar before measuring, since the flour settles.
With drippings, use 1/4 cup turkey drippings plus 3/4 cup water and omit the butter.
The butter is not optional if you want packet flavor. The packet contains chicken fat, and a dry mix cannot include fat without going rancid, so it goes in at the end instead.
For darker color, whisk in 1/4 teaspoon browning sauce at the end, or toast the flour in a dry skillet until pale tan and cool completely before mixing.
Make ahead: prepared gravy keeps 3 days refrigerated and 3 months frozen. Reheat with a splash of water and whisk well.
