Copycat Kashi GoLean Crunch recreates the crunchy honey almond flax clusters at home with rolled oats, crisp rice, flaxseed, almonds, and protein powder. Air fryer or oven directions, ready in 20 minutes.
Ingredients
2 1/2cupsold-fashioned rolled oats
1 1/2cupscrisp rice cereal
3/4cupsliced almonds
1/3cupground flaxseed
1/2cupvanilla protein powder
3tablespoonslight brown sugar
1/2teaspoonkosher salt
1/2cuphoney
1/4cupcoconut oil or neutral oil
1teaspoonvanilla extract
1large egg white
Instructions
Mix dry ingredients: In a large bowl, combine oats, crisp rice cereal, almonds, flaxseed, protein powder, brown sugar, and salt.
Warm wet ingredients: Heat honey and coconut oil until melted and pourable. Stir in vanilla. Cool 1 minute, then whisk in the egg white.
Combine: Pour the honey mixture over the dry ingredients and stir until fully coated and clumpy.
Press: Line the air fryer basket or a baking sheet with parchment. Spread the granola in an even 1/2-inch layer and press down firmly.
Air fryer: Cook at 300°F for 12 to 15 minutes until golden, without stirring. Work in batches if needed. Oven: Bake at 300°F for 25 to 30 minutes until golden, rotating the pan halfway but not stirring.
Cool: Let cool completely, at least 30 minutes, without touching. Break into clusters and store in an airtight container.

Do not stir during cooking or break apart while warm; both prevent clusters from forming.
For vegan granola, use maple syrup, plant protein powder, and 2 tablespoons aquafaba in place of the egg white.
For gluten-free, use certified gluten-free oats and crisp rice.
