Description

Ingredients 

  • 3 pounds beef chuck roast, cut into 2–3 inch chunks
  • 1 packet dry onion soup mix, about 1 ounce
  • 1 ounce dry ranch dressing mix,
  • 1/4 cup beef broth,
  • 2 tablespoons water, optional, for extra moisture
  • 4 medium potatoes, peeled and cubed
  • 4 large carrots, optional, peeled and sliced
  • 1 cup pearl onions, peeled
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste

Instructions

  • Pat beef chunks dry. Season all sides with salt, pepper, dry onion soup mix, and ranch dressing mix.
  • Sear beef chunks in a hot skillet or air fryer sear function for 2–3 minutes per side.
  • Place beef, potatoes, carrots, and pearl onions on a large sheet of foil. Add a few tablespoons of beef broth and wrap tightly.
  • Preheat air fryer to 360°F. Place foil packet in basket and cook for 35–45 minutes, flipping halfway through.
  • Check that internal temperature reaches 195°F. Let rest 5–10 minutes before carefully unwrapping. Serve with veggies and juices.
