1poundBoneless, Skinless, Chicken Breasts, or skinless chicken thighs
2cupsEgg Noodles,
2mediumCarrots, peeled and diced
2stalksCelery, diced
1mediumOnion, diced
6cupsChicken Broth,
2tablespoonsButter
1teaspoonSalt, to taste
1teaspoonthyme, dried

Instructions
In a large pot, simmer the chicken in chicken broth until fully cooked. Remove the chicken, shred it into bite-sized pieces, and set aside.
