Peel 2 Russet potatoes and cut into 1/3-inch thick fries.
Run the cut fries under water for 1 minute to remove excess starch. Transfer to a bowl of hot water and let soak 15 minutes.
Meanwhile, in a small mixing bowl, stir together 1 tablespoon cornstarch, 2 teaspoons paprika, 1 teaspoon seasoned salt, 3/4 teaspoon pepper, 1/2 teaspoon onion powder, and 1/2 teaspoon garlic powder to make the fry seasoning.
Drain the cut fries and pat dry with paper towels. Drizzle with 1 tablespoon vegetable oil and then toss in the fry seasoning until evenly coated. Transfer to the air fryer basket.
Air fry at 375°F for 15 minutes.
Toss fries in the air fryer basket and spray with vegetable oil spray for a crispier outside.
Increase the temperature to 400°F and air fry 5–7 minutes, just until crispy on the outside and tender on the inside. Lightly season with salt as soon as they are removed from the air fryer.
