Description

These Copycat Buc-ee's Candied Almonds and Cashews taste just like the cinnamon-glazed nuts from the famous Texas travel stop. Raw almonds and cashews get a crunchy cinnamon-sugar coating, baked low and slow in the oven or made fast in the air fryer. Perfect for snacking, road trips, and homemade holiday gifts.

Ingredients 

  • 2 cups whole almonds, raw
  • 2 cups whole cashews, raw
  • 1 large egg white
  • 1 tbsp water
  • 1 tsp vanilla extract
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 tbsp ground cinnamon
  • 1 tsp kosher salt

Instructions

  • Heat oven to 250°F and line a rimmed baking sheet with parchment.
  • Mix sugars, cinnamon, and salt in a small bowl.
  • Whisk egg white, water, and vanilla in a large bowl until frothy.
  • Stir in the nuts until coated, then add the cinnamon sugar and toss well.
  • Spread in a single layer and bake 1 hour, stirring every 15 minutes.
  • Cool completely, break up clusters, and store airtight.

Notes

Air fryer: Line the basket with parchment and cook half the nuts at 300°F for 15 to 18 minutes, shaking every 5 minutes. Repeat.
