Ingredients 

Cajun Dirty Rice

  • 1 cup long-grain white rice
  • 1/2 lb ground beef
  • 1/2 lb ground pork sausage
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 stalk celery, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 1/2 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper, or to taste
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Crispy Chicken

  • 1 lb boneless, skinless chicken breasts, or thighs, cut into 1-inch pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 1/2 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying, or oil spray for air fryer

Assembly

  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup Bo Sauce
  • Sliced green onions, optional

Instructions

  • Brown the beef and sausage in a large skillet over medium-high heat. Add onion, bell pepper, and celery; cook 5 minutes. Stir in garlic and spices; cook 1 minute.
  • Add rice and broth. Bring to a boil, reduce to a simmer, cover, and cook 18 to 20 minutes until liquid is absorbed. Fluff and keep warm.
  • Toss chicken with buttermilk and a pinch of Cajun seasoning. Let sit 15 minutes.
  • Whisk together flour, cornstarch, and seasonings. Dredge chicken in the flour mixture, pressing to coat. Double dredge for extra crunch.
  • Fry: Heat 1 inch of oil to 350°F and fry chicken in batches 4 to 5 minutes until golden and 165°F inside. Air fry: Spray chicken with oil and air fry at 400°F for 10 to 12 minutes, flipping halfway.
  • Divide rice among bowls. Top with chicken, cheddar, and Bo Sauce. Garnish with green onions and serve hot.

Notes
