Description

Make this easy Chocolate Chip Cookie Granola, a Purely Elizabeth copycat recipe, packed with oats, coconut, and chocolate chips. Perfect for a healthy snack or breakfast!

Ingredients 

  • 6 cups rolled oats
  • 1/2 cup coconut oil, melted
  • 1/2 cup coconut sugar
  • ½ cup oat flour
  • 5 tablespoons almond butter
  • 3 tablespoons maple syrup
  • 1 tablespoons chia seeds
  • 2 teaspoons vanilla extract, adjust to taste
  • 1 teaspoon sea salt, adjust to taste
  • 1 teaspoon cinnamon, adjust to taste
  • 1 teaspoon baking soda
  • 3/4 cup chocolate chunks, or chocolate chips

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the melted coconut oil, coconut sugar, almond butter, maple syrup, and vanilla extract. Stir until well combined.
  • To the wet mixture, add rolled oats, oat flour, chia seeds, sea salt, cinnamon, and baking soda. Stir until the oats are evenly coated.
  • Spread the granola mixture evenly onto the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until golden brown and crispy.
  • Once the granola is baked and cooled, fold in the chocolate chunks or chips.
  • Allow the granola to cool completely before storing it in an airtight container at room temperature for up to two weeks.
