Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the melted coconut oil, coconut sugar, almond butter, maple syrup, and vanilla extract. Stir until well combined.
To the wet mixture, add rolled oats, oat flour, chia seeds, sea salt, cinnamon, and baking soda. Stir until the oats are evenly coated.
Spread the granola mixture evenly onto the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until golden brown and crispy.
Once the granola is baked and cooled, fold in the chocolate chunks or chips.
Allow the granola to cool completely before storing it in an airtight container at room temperature for up to two weeks.
