3poundsbeef chuck roast
2tablespoonsOlive oil , or cooking spray
1largeOnion , sliced into wedges
4mediumCarrots , peeled and chopped into chunks
3mediumPotatoes , cut into chunks
1cupBeef broth
2tablespoonsWorcestershire sauce
1teaspoonGarlic powder
1teaspoonOnion powder
1 ½teaspoonsSalt, or as per taste
1teaspoonBlack pepper
1teaspoonItalian seasoning
Instructions
Preheat the air fryer to 375°F. Add 3 pounds beef chuck roast and season generously with 1 teaspoon Garlic powder , 1 teaspoon Onion powder , 1 ½ teaspoons Salt, 1 teaspoon Black pepper , and 1 teaspoon Italian seasoning . Brush lightly with 2 tablespoons Olive oil .
Add roast to air fryer basket and cook for 15 minutes to brown all sides of the roast.
Place4 medium Carrots , 3 medium Potatoes and 1 large Onion around the roast. Add 1 cup Beef broth and 2 tablespoons Worcestershire sauce .
Set air fryer temperature to 325°F and Air Fry for 45-60 minutes, flipping halfway through and basting with juices if desired. Cook until the roast is as tender as you like (internal temp 190-200°F for pull apart pot roast).
Rest for 10 minutes before slicing. Serve with veggies and pan drippings for that Bob Evans taste you love at home.
