Collect all the ingredients you'll need for your wet burritos.
Set your Blackstone griddle to medium heat and allow it to warm up.
Once the griddle is hot, add the 1/2 pound ground beef and 1/2 cup onions to a lightly greased surface.
Sprinkle your favorite seasonings, such as 1/4 teaspoon salt, and 1/4 teaspoon black pepper over the beef mixture.
Cook the meat, breaking it into small pieces with the spatula as it browns on medium heat.
Once the beef is fully cooked, remove any excess fat and push it into the grease trap.
Lay a 2 Tortillas flat, fill with the cooked beef mixture, and top with cheese. Roll the burrito tightly.
(Optional) Place the burritos back on the griddle to crisp up, about 2-3 minutes on each side.
Smother the burritos with 5 ounces red enchilada sauce and sprinkle more 2 cups Colby Jack Cheese on top. Let the cheese melt and serve immediately with your favorite toppings like sour cream, salsa, or guacamole.
