Description

Ingredients 

  • 2 cups fresh corn kernels, or frozen corn kernels
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1 teaspoon baking powder
  • 1/4 cup milk , or buttermilk
  • Salt and pepper to taste

Optional: Chopped green onions, herbs, or spices for extra flavor

Instructions

  • In a large mixing bowl, combine the corn kernels, eggs, flour, cornmeal, baking powder, milk or buttermilk, salt, pepper, and any optional ingredients like chopped green onions or herbs. Stir until the batter is well combined and slightly thick.
  • Preheat your Blackstone griddle over medium heat. It's important to ensure the griddle is evenly heated before cooking the fritters.
  • Lightly grease the hot griddle with cooking oil or butter to prevent the fritters from sticking.
  • Spoon a portion of the batter onto the griddle for each fritter, using about 1/4 cup of batter for each fritter. Leave some space between each fritter to allow for spreading.
  • Use the back of the spoon or a spatula to gently spread the batter into a round shape, about 3-4 inches in diameter.
  • Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Use a spatula to carefully flip them over halfway through cooking.
  • Once cooked, transfer the corn fritters to a plate lined with paper towels to absorb any excess oil.
  • Serve the corn fritters warm as a delicious appetizer, side dish, or snack. They pair well with sour cream, salsa, or your favorite dipping sauce.
