Description

This Asparagus Salad with Goat Cheese combines tender blanched asparagus, fresh spinach, and juicy cherry tomatoes for a refreshing bite. Ingredients 

  • 1 pound fresh asparagus, trimmed and cut into 1–2 inch pieces
  • 4 cups spinach leaves
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 4 ounces goat cheese, crumbled
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper

Optional garnish: fresh basil leaves or crushed nuts

Instructions

  • Trim the woody ends off the asparagus and cut into 1–2 inch pieces.
  • Bring a pot of salted water to a boil. Add the asparagus and cook for 2–3 minutes until bright green and just tender. Immediately transfer to an ice water bath to stop cooking. Drain well.
  • In a large salad bowl, add the spinach leaves, halved cherry tomatoes, sliced red onion, and blanched asparagus.
  • Sprinkle the crumbled goat cheese evenly over the salad.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine. Garnish with fresh basil or crushed nuts if desired. Serve immediately.
