In a large mixing bowl, mix together the eggs, oil, Parmesan cheese, salt, Italian seasoning, garlic powder, and grated onion.
Fold in the Bisquick until just combined.
Grate the zucchini and place it on paper towels to remove the excess liquid — otherwise the batter will be too wet to hold its shape.
Fold in the dried zucchini until evenly distributed.
Line the air fryer basket with parchment paper cut to fit. Using a cookie scoop, drop portions of batter onto the parchment about an inch apart, and flatten each one slightly.
Air fry at 330°F for 10 to 15 minutes, until golden and set. Start checking at 8 minutes. If the tops brown too quickly, lay a piece of foil loosely over them.
Check that they're fully cooked through, then let cool 2 to 3 minutes before lifting off the parchment. Plate, serve, and enjoy!
