Ingredients
3cupszucchini, chopped (about 3 small zucchini)
1/2cuponion, chopped
4largeeggs, beaten
1cupBisquick, or gluten-free baking mix
1/2cupvegetable oil
1/2cupshredded cheese
1teaspoonsalt
1/2teaspoonblack pepper
1teaspoondried parsley
1/2teaspoondried oregano
Instructions
Chop the zucchini into small pieces until you have 3 cups, then chop the onion.
Add the zucchini and onion to a large bowl with the salt, pepper, parsley, and oregano, and mix well.
Stir in the eggs, vegetable oil, Bisquick, and shredded cheese until fully combined.
Pour the mixture into a greased, oven-safe baking dish that fits inside your air fryer.
