Description

Ingredients 

For the Baked Potatoes:

  • 2 large baking potatoes, scrubbed clean
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Seafood Topping:

  • 1/2 cup cooked shrimp, peeled and chopped
  • 1/2 cup crab meat, can use imitation crab if preferred
  • 1/2 cup sour cream
  • 1/4 cup cream cheese, softened
  • 1/4 cup green onions, chopped
  • 1/2 cup grated cheddar cheese
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • 1 teaspoon Old Bay seasoning, optional, for an extra kick

Instructions

  • Preheat your air fryer to 400°F (200°C).
  • Use a fork to prick the potatoes all over, then rub them with olive oil and season with salt and pepper.
  • Place the potatoes in the air fryer basket and cook for 40-45 minutes, or until they’re tender and fully cooked.
  • In a mixing bowl, combine the cooked shrimp, crab meat, sour cream, cream cheese, green onions, cheddar cheese, garlic powder, and lemon juice.
  • Season the mixture with salt, pepper, and Old Bay seasoning if desired, stirring until evenly blended.
  • Once the potatoes are ready, slice them open carefully, as they will still be hot.
  • Fluff the insides with a fork, then generously stuff them with the prepared seafood mixture.
  • Return the stuffed potatoes to the air fryer basket.
  • Cook for 5-7 minutes or until the topping is hot and the cheese has melted to perfection.
  • Garnish the loaded potatoes with additional chopped green onions.
  • Serve alongside lemon wedges for an extra zesty finish.
