Description

Air Fryer Scallops with Ritz Crackers are crispy, golden, and full of buttery, savory flavor. Quick and easy to make, ideal as an appetizer or a seafood dinner.

Ingredients 

  • 2 large sea scallops, patted dry
  • 1/2 cup all-purpose flour
  • 1 cup Ritz Crackers, finely crushed
  • 4 tablespoons butter, melted butter
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 large lemon, juiced
  • 1 teaspoon salt, to taste
  • 1/2 teaspoon black pepper, to taste
  • 1 large egg, beaten

Instructions

  • Dry the 2 large sea scallops with a kitchen towel or paper towel. Lightly season the scallops with 1 teaspoon salt and 1/2 teaspoon black pepper
  • Set up three shallow dishes for a breading station. In the first dish, place the 1/2 cup all-purpose flour seasoned with a little salt and pepper. In the second dish, beat 1 large egg. In the third dish, combine the finely crushed 1 cup Ritz Crackers with 1/2 teaspoon garlic powder and 1/4 teaspoon paprika.
  • First, coat each scallop lightly in the flour, shaking off any excess. Dip next into the beaten egg, and finally, press into the cracker mixture, ensuring they are well-coated on all sides.
  • Before placing the scallops in the air fryer, drizzle or brush them with melted 4 tablespoons butter .This will help achieve a golden and crispy exterior.
  • Preheat your air fryer temperature to 400 degrees F (200°C) for 2-3 minutes.
  • Arrange the scallops in a single layer in the air fryer basket, making sure they don’t touch. Set cook time for 8-10 minutes, or until they are golden brown and the scallops reach an internal temperature of 145°F (63°C).
  • Once done, squeeze 1 large lemon juice over the scallops and garnish with chopped parsley. Serve with additional lemon wedges for guests to add to taste.

Oven Method:
Preheat oven to 400°F (200°C). Place breaded scallops on a parchment-lined baking sheet. Bake 10–12 minutes, flipping halfway through, until golden and crispy.
Skillet Option:
Heat a skillet over medium heat with a small amount of AIP-compliant or neutral oil. Sear scallops 2–3 minutes per side until golden and cooked through.
