Preheat Your Air Fryer: Preheat your air fryer to 370 degrees F (190°C) for 3-5 minutes.
Prepare the Saukerkraut: Place the sauerkraut in a clean kitchen towel and ring it out to remove excess liquid. Place the drained sauerkraut into a small bowl, mix it with 1 tablespoon of Russian dressing, and set aside.
Prepare the Egg Rolls: Place the egg roll wrappers on a clean work surface, with one of the points facing you. Place a slice of cheese near the bottom third of the wrapper. Place some of the corned beef on top and some of the sauerkraut mixture. Divide the mixture into 12 egg rolls.
Foling The Egg Rolls: Tighly fold the bottom point over the mixture, fold the two sides over, and continue to roll tightly. Once you reach the endpoint, secure it by dipping a fingertip into the water, running it along the seam, and continuing to roll until secured and closed.
Continue with the remaining wrappers and filling.
Air Fry: Spray the air fryer with nonstick cooking spray. Place the roll, not touching, into the basket; depending on the size of your air fryer, you will need to cook it in batches. Air fry for 5 minutes, flip the egg rolls over, spay with cooking spray, and cook for another 5 minutes.
Repeat with the remaining egg rolls, and serve with optional parsley garnish or more Russian dressing for dipping.
