Ingredients 

Pumpkin French Toast Sticks:

  • 4 slices Brioche Bread,  (or similar thick cut style bread)
  • 2 large eggs
  • 2 tablespoons canned pumpkin
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Cinnamon Sugar:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Grease your air fryer tray with cooking spray and set aside.
  • Slice the bread into strips, about 4 strips per bread slice.
  • Mix the cinnamon and sugar and set aside.
  • In a medium bowl, whisk together the pumpkin, egg, milk, sugar and spices until well combined.
  • Dip the bread strips into the egg mixture and shake off any excess.
  • Sprinkle the dipped strips with the cinnamon sugar.
  • Working in batches, place the bread strips into the air fryer basket and cook on the air fry setting at 325 degrees F for 4-6 minutes, turning halfway through. Repeat until all French toast sticks are cooked.
  • Plate, serve, and enjoy!
