Ingredients
2salmon fillets, about 6 oz each, skin-on
2peaches, peeled, pitted, and sliced 1/4 inch thick
1tablespoonolive oil
1tablespoonhoney
1tablespoonsoy sauce, or tamari for gluten-free
1tablespoonlemon juice, freshly squeezed
1/2teaspoongarlic powder
1/4teaspoonsalt, plus more for seasoning
1/4teaspoonblack pepper, plus more for seasoning
Instructions
In a small saucepan, combine the honey, soy sauce, lemon juice, garlic powder, salt, and pepper.
Heat over medium, stirring occasionally, for 5 to 7 minutes until the glaze thickens enough to coat the back of a spoon. Remove from heat and set aside.
Preheat the air fryer to 400°F (200°C).
Pat the salmon fillets completely dry with paper towels. Brush both sides with olive oil and season with salt and pepper.
Place the fillets in the air fryer basket skin-side down, leaving space between them.
Arrange the peach slices over the top of each fillet, pressing gently so they adhere.
Air fry for 8 to 10 minutes, depending on thickness.
During the last 2 minutes, brush the fillets generously with the peach glaze and let it set.
Cook until the internal temperature reaches 145°F (63°C) and the salmon flakes easily with a fork.
Remove from the basket, drizzle with any remaining glaze, and serve immediately.
Glaze during the final 2 minutes only — honey burns at 400°F. Peaches should be sliced no thinner than 1/4 inch. The glaze can be made up to 3 days ahead and refrigerated.
