Ingredients 

Meatloaf Cupcake Ingredients:

  • 1 pound ground beef
  • 2 carrots, grated
  • 1 yellow onion, grated
  • 2 large eggs
  • ¼ cup ketchup
  • 1 cup breadcrumb
  • 1 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • ½ teaspoon pepper

Mashed Potato Frosting Ingredients:

  • 2 russet potatoes, peeled and cubed
  • 1 teaspoon salt
  • 1 tablespoon butter
  • ½ cup milk
  • fresh parsley, for topping

Instructions

  • In a bowl, combine all the meatloaf ingredients and mix until just combined.
  • Line a muffin tin with cupcake liners for easy cleanup.
  • Spoon the meatloaf mixture into the muffin liners, pressing down to form a dome shape.
  • Bake at 330°F for 25-30 minutes, or until fully cooked through.
  • In a saucepan, add potatoes, water, and salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until fork-tender.
  • Drain the potatoes and stir in butter and milk. Mash until smooth and creamy.
  • Transfer the mashed potatoes to a ziplock bag. Snip the corner and pipe them onto each meatloaf cupcake, resembling frosting.
