Description

Crispy air fryer jalapeno popper egg rolls stuffed with cream cheese, sharp cheddar, and bacon. Ready in 20 minutes -- no deep frying, no soggy wrappers.

Ingredients 

  • 5 fresh jalapenos, seeds and membranes removed, finely chopped
  • 8 ounces block cream cheese, softened to room temperature
  • 1 cup sharp cheddar cheese, freshly shredded
  • 1/2 cup bacon bits, or finely chopped cooked bacon
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 16 egg roll wrappers
  • 1 teaspoon water, for sealing the wrappers
  • 1/2 cup ranch dressing or sour cream, for dipping (optional)

Instructions

  • Combine the chopped jalapenos, softened cream cheese, shredded cheddar, bacon bits, garlic powder, kosher salt, and black pepper in a bowl. Stir until completely uniform with no streaks of plain cream cheese remaining.
  • Lay one egg roll wrapper on a clean surface with a corner pointing toward you, like a diamond. Spoon about 2 tablespoons of filling in a line just below the center. Do not overfill -- this is the main cause of blowouts.
  • Fold the bottom corner up over the filling and tuck it under. Fold both side corners in toward the middle. Roll away from you, snug, then seal the top corner with a dab of water. Repeat with the remaining wrappers, keeping unused ones under a damp towel so they don't dry out and crack.
  • Set the air fryer to 390 degrees F and preheat for 3 minutes. A cold basket is the number one reason egg rolls come out pale instead of golden.
  • Place the egg rolls seam side down in a single layer with space between each one. Work in batches. Spray or brush lightly with oil on all sides -- any dry patch stays chalky white.
  • Air fry at 390 degrees F for 8 to 10 minutes, flipping at the halfway mark, until deep golden brown and crisp.
  • Transfer to a wire rack, not a plate -- a flat plate traps steam and softens the bottoms. Rest 2 minutes, then serve hot with ranch dressing or sour cream for dipping.

Notes

Air fryers vary by model and wattage -- start checking at 7 minutes the first time you make these.
MAKE AHEAD: Roll and refrigerate up to 24 hours, covered, on a parchment-lined tray. Cook as directed with no time change.
FREEZE UNBAKED: Flash-freeze rolled, uncooked egg rolls on a tray for 2 hours, then transfer to a freezer bag. Keeps 3 months. Cook from frozen at 375 degrees F for 10 to 12 minutes, flipping halfway. Do not thaw -- the wrappers turn gummy.
DEEP FRIED: Heat 3 inches of neutral oil to 350 degrees F. Fry 3 to 4 egg rolls at a time for 2 to 3 minutes, turning once. Drain on a wire rack.
OVEN BAKED: 400 degrees F on a wire rack set inside a sheet pan, 18 to 22 minutes, flipping halfway.
LEFTOVERS: Store in an airtight container in the fridge 2 to 3 days with a paper towel underneath. Reheat at 350 degrees F for 4 to 6 minutes. Never microwave -- the wrapper goes limp instantly.
