Air Fryer Jalapeño Corn Muffins are fluffy, slightly sweet, and packed with a spicy jalapeño kick. Quick and easy to make, these muffins are perfect as a side dish, snack, or chili companion.
Ingredients
1cupyellow cornmeal
1cupall-purpose flour
1/2teaspoonbaking soda
1teaspoonsbaking powder
1/2teaspoonsalt
1/2cupmelted butter, unsalted
2teaspoonshoney
2tablespoonsvegetable oil
1/3cupbrown sugar
1largeegg
1cupbuttermilk
2jalapeno peppers, sliced
Instructions
In a large mixing bowl, mix the dry ingredients, the 1 cup yellow cornmeal, 1 cup all-purpose flour1/2 teaspoon baking soda1 teaspoons baking powder, and 1/2 teaspoon salt
In another, both mix the 1/2 cup melted butter, 2 tablespoons vegetable oil, 1/3 cup brown sugar, 2 teaspoons honey, 1 large egg, and 1 cup buttermilk Mix well. Fold the dry ingredients into the wet ingredients. Slowly fold the 2 jalapeno peppers into the batter.
Either grease your muffin tins or place a liner into them. Fill them about 2/3 the way full. Set the muffin tin into the air fryer basket, and set the temperature to 320 degrees F, air fryer setting for 10-12 minutes.
Insert a toothpick into the center of the Air Fryer Jalapeno Corn Muffins. If it comes out clean, remove it from the Air Fryer.
