In one bowl, combine flour, garlic powder, salt, and pepper. In another bowl, whisk the egg. In a third bowl, mix panko breadcrumbs and Parmesan cheese.
Dip each jalapeño slice into the flour mixture, then into the egg, and finally coat with the breadcrumb mixture. Press gently to ensure it sticks.
Preheat the air fryer to 375°F (190°C). Arrange the coated jalapeños in a single layer in the air fryer basket and lightly spray with cooking spray.
