Recreate Red Robin's crispy, golden Jalapeno Coins at home using your air fryer! This easy recipe delivers spicy, crunchy perfection with a Parmesan breadcrumb coating and a satisfying dip-worthy texture.

Ingredients 

  • 8 fresh jalapeños, sliced into ¼-inch rounds
  • ½ cup all-purpose flour, or gluten-free flour
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 large egg, beaten (or egg wash)
  • 1 cup panko breadcrumbs
  • ½ cup Parmesan cheese, grated

Instructions

  • Slice the fresh jalapeños into ¼-inch rounds, removing seeds for a milder heat, if desired.
  • In one bowl, combine flour, garlic powder, salt, and pepper. In another bowl, whisk the egg. In a third bowl, mix panko breadcrumbs and Parmesan cheese.
  • Dip each jalapeño slice into the flour mixture, then into the egg, and finally coat with the breadcrumb mixture. Press gently to ensure it sticks.
  • Preheat the air fryer to 375°F (190°C). Arrange the coated jalapeños in a single layer in the air fryer basket and lightly spray with cooking spray.
  • Air fry for 6-8 minutes, flipping halfway through, until the coins are golden and crispy.
  • Remove from the air fryer and serve with your favorite dipping sauce, such as ranch or guacamole. Enjoy!
