Pat turkey wings completely dry with paper towels.
Toss wings with olive oil, garlic powder, oregano, smoked paprika, cumin, salt, and pepper until evenly coated.
Cover and refrigerate at least 30 minutes (or up to 8 hours).
Preheat air fryer to 380°F (193°C) for 5 minutes.
While preheating, whisk honey, soy sauce, brown sugar, Dijon, vinegar, and minced garlic in a small bowl.
Arrange wings in a single layer in the air fryer basket. Cook 15 minutes at 380°F.
Flip wings, brush with half the honey glaze, and cook another 10 minutes.
Brush with remaining glaze and cook 5–10 more minutes until deeply caramelized and internal temperature reaches 165°F (74°C).
Rest 5 minutes before serving. Garnish with sesame seeds and parsley if desired.
