Ingredients

  • 1/2 cup red onion, diced
  • 1/2 tablespoon garlic, minced
  • 1 teaspoon sea salt
  • 1 cup white vinegar
  • 1/2 cup ham, diced
  • 1/2 cup pineapple, diced
  • 1 teaspoon ginger, dried
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 10 mini bagels
  • 1/2 cup barbecue sauce
  • 1/2 cup Colby Jack Cheese, shredded
  • 3 mini sweet peppers
  • 2 tablespoons Cilantro, garnish

Instructions

  • Prepare pickled red onions at least 30 minutes before cooking. Dice the red onion, then add to a mason jar or sealable container. Add garlic, sea salt, and vinegar. Seal and set aside for at least 30 minutes to properly pickle the onions.
  • Preheat the air fryer to 400* for 5 minutes. Halve the mini bagels and place the open face onto a solid surface. In a medium mixing bowl, combine diced ham, pineapples, ginger, red pepper flakes, and a pinch of salt and pepper.
  • Spread a dollop of barbeque sauce onto the bagels. Sprinkle cheese over the bbq sauce to cover, then add ham/pineapple mixture.  Place bagel bites into the air fryer in a single layer and cook for 7 minutes.
  • Top with pickled red onion and sliced sweet peppers and garnish with fresh cilantro.
