Ingredients
1/2cupred onion, diced
1/2tablespoongarlic, minced
1teaspoonsea salt
1cupwhite vinegar
1/2cupham, diced
1/2cuppineapple, diced
1teaspoonginger, dried
1teaspoonred pepper flakes
1teaspoonsalt
1teaspoonblack pepper
10minibagels
1/2cupbarbecue sauce
1/2cupColby Jack Cheese, shredded
3minisweet peppers
2tablespoonsCilantro, garnish
Instructions
Prepare pickled red onions at least 30 minutes before cooking. Dice the red onion, then add to a mason jar or sealable container. Add garlic, sea salt, and vinegar. Seal and set aside for at least 30 minutes to properly pickle the onions.
Preheat the air fryer to 400* for 5 minutes. Halve the mini bagels and place the open face onto a solid surface. In a medium mixing bowl, combine diced ham, pineapples, ginger, red pepper flakes, and a pinch of salt and pepper.
Spread a dollop of barbeque sauce onto the bagels. Sprinkle cheese over the bbq sauce to cover, then add ham/pineapple mixture. Place bagel bites into the air fryer in a single layer and cook for 7 minutes.
Top with pickled red onion and sliced sweet peppers and garnish with fresh cilantro.
