Ingredients 

  • 2 small eggplants
  • 3/4 cup all-purpose flour
  • 3 large eggs, whisked
  • 1 cup breadcrumbs, Italian seasoned
  • 1/2 cup grated Parmesan cheese, or shredded Parmesan cheese

Instructions

  • Using a mandolin, slice the eggplant at 1/8” in thickness to create thin circles.
  • Combine the breadcrumbs and cheese in a large bowl.
  • Dredge the eggplant slices in a bowl of flour, followed by a bowl containing the whisked eggs, lastly into a bowl of breadcrumbs with cheese.
  • Working in batches, lay the eggplant pieces into an air fryer basket and air fry at 375 degrees F for 4-6 minutes.
  • Serve with your favorite dipping sauce.
